The Upstart Guide to Owning & Managing a Restaurant by Roy S. Alonzo is a very useful book. The book breaks down the Front and Back of House of the Restaurant giving typical equipment for dining area, bar area, and kitchen area, and aisle widths. The book also gives equations for figuring out how many of sertain size tables one would need.
